Sooji Halwa (Semolina Halwa) - Dessert

Sooji Halwa is a popular dessert that is widely used across many cultures in India.
Ingredients:
- 1 cup sooji (semolina) 
- 3/4 cup sugar (I used brown sugar) 
- 3/4 cup ghee. If you don't have ghee, you can use unsalted butter. 
- 1 teaspoon cardamom powder 
- 4 tablespoons raisins (optional) 
- 10-12 pieces halved almonds (optional) 
- 2.5 cups water 
Directions:
- Keep a pan on a low flame. 
- Add the ghee and add Sooji (semolina), and almonds (optional). 
- Keep on stirring the sooji (semolina) on medium flame so that semolina does not stick to the pan or gets burn and is fried evenly. 
- Take the sugar, water, and cardamon in another pan. Keep this pan on a medium to high flame and let the sugar solution come to a boil. Keep it on the flame until the sugar gets dissolved in water. 
- Keep on frying & stirring the semolina for 7 to 8 mins till the grains change their color, add raisins (optional). 
- Stir and then add the bubbling hot sugar solution slowly to the fried sooji mixture. 
- Be careful while adding a sugar-water solution to the fried semolina as it will splutter. 
- Be quick enough to stir. The sooji will begin to absorb the water and swell. 
- Keep on stirring often till the whole mixture starts thickening and starts to leave the edges of the pan. 
- Serve sooji halwa.
