Quinoa and Lentil Dosa

Ingredients:

  1. 1½ Cup Quinoa

  2. ½ Cup Brown Rice, (if you don't want rice, double the amount of Quinoa and Rice)

  3. 1/2 cup yellow moong dal (lentil)

  4. ½ Cup Skinless urad dal (lentil)

  5. 1 tbsp Fenugreek seeds

  6. 4 tbsp Cooking Oil or as required

  7. 1/2 tsp Salt or as required

  8. 1 tsp cumin seeds

Directions:

Dosa Batter prep:

  • Wash and soak Quinoa, rice, dal and methi seeds together for at least 4-6 hours.

  • Add salt and blend well. The batter should be of flowing consistency.

Dosa fermentation:

  • Transfer the content to a large bowl.

  • Let the batter rest inside overnight for fermentation.

Making Dosa's :

  • Heat griddle or a non-stick or cast iron pan. Now use a ladle to pour half a cup of batter and spread evenly by moving the ladle in a circular motion. Make sure the batter is thin and even. Keep the flame on medium.

  • Now drizzle some cooking oil on the dosa. Let the dosa cook till golden brown. and then flip and cook the other side.

Dosa is ready and can be eaten with Sambar (lentil) or with coconut chutney.
