Poha is traditional Indian breakfast food. Poha is flattened rice and has a lot of health benefits which includes but not limited to:

Low In Calories.
Poha Ingredients:
1 Cup Poha (flattened rice)
1 tbsp ghee or oil of your choice
1/8 tsp Asafoetida
1 tsp Mustard seeds
1/2 cup Onions, finely chopped. I prefer red onions ut you can use any.
8-10 Curry leaves
1/2 cup Potatoes (diced small)
1/2 tsp Turmeric
Salt as per taste
red chilli powder as per taste.
1 tbsp Lemon juice
1 tbsp Coriander leaves, chopped (for garnishing)
Directions:
Wash poha in a colander, not letting it soak too long in the water. Leave in the colander to drain out all the water. It should feel slightly sticky to touch but not too much.
Heat the ghee or oil and add asafoetida, mustard seeds, curry leaves, red chilli powder and onions.
When onions are light brown and add potatoes. Cook on low flame for 2-3 minutes.
Add the turmeric and salt, sauté over low heat till the potatoes are completely cooked.
Increase the heat, poha and mix well. Saute till mixed and heated through.
Shut off the heat, and add the lemon juice and half of the coriander.
Transfer on to a serving dish, garnish with the rest of the coriander and serve.
