Poha (Flattened Rice)

Poha is traditional Indian breakfast food. Poha is flattened rice and has a lot of health benefits which includes but not limited to:

  • Controls Blood Sugar Levels. Poha is considered a good meal for diabetics.

  • Good Probiotic.

  • A Good Source Of Healthy Carbohydrates.

  • Easy to digest

  • Rich In Iron.

  • Low In Calories.

Poha Ingredients:

  • 1 Cup Poha (flattened rice)

  • 1 tbsp ghee or oil of your choice

  • 1/8 tsp Asafoetida

  • 1 tsp Mustard seeds

  • 1/2 cup Onions, finely chopped. I prefer red onions ut you can use any.

  • 8-10 Curry leaves

  • 1/2 cup Potatoes (diced small)

  • 1/2 tsp Turmeric

  • Salt as per taste

  • red chilli powder as per taste.

  • 1 tbsp Lemon juice

  • 1 tbsp Coriander leaves, chopped (for garnishing)


Directions:

  • Wash poha in a colander, not letting it soak too long in the water. Leave in the colander to drain out all the water. It should feel slightly sticky to touch but not too much.

  • Heat the ghee or oil and add asafoetida, mustard seeds, curry leaves, red chilli powder and onions.

  • When onions are light brown and add potatoes. Cook on low flame for 2-3 minutes.

  • Add the turmeric and salt, sauté over low heat till the potatoes are completely cooked.

  • Increase the heat, poha and mix well. Saute till mixed and heated through.

  • Shut off the heat, and add the lemon juice and half of the coriander.

  • Transfer on to a serving dish, garnish with the rest of the coriander and serve.
